Coriander seed and coriander leaf are the same plant at two stages, and the kitchen uses both. Seeds go into a jar of water overnight and the strained sip is a quiet afternoon drink. Leaves finish dal, chutney, and salads the same day they are washed.

This is ordinary food, not a fever drink or a digestion treatment. One glass of the soaking water through a hot afternoon is plenty. Do not boil the seeds down into a strong decoction and call it medicine.

  1. Rinse the coriander seeds, soak them in a glass of water overnight, and strain in the morning.

  • Sip the strained seed water through a hot afternoon, not the whole jug at once.
  • Stir fresh leaves into hot dal only at the end so they stay green.
  • Use the leaves the same day. Keep the strained seed water in the fridge and finish it that day.

  • If the water tastes soapy or bitter, the soak was too long or the seeds were old. Start again with less.

  • Coriander water is a kitchen sip, not a treatment for fever, urinary trouble, or piles.
  • A very large amount can feel cooling and heavy. Stay with one glass.
