Roasted cumin aam panna, diluted and not too sour

Raw mango aam panna can refresh a hot day, but a very sour glass is hard on the stomach. This version uses roasted cumin, mint, rock salt and a little jaggery, then plenty of water so the cooler stays mild.

Aam panna is the summer drink made from cooked raw mango. Roasting the cumin before it goes in gives a warmer, rounder taste than raw jeera powder from a packet. Mint and rock salt keep it familiar, and jaggery takes the sharp edge off without making a sweet squash.

Hot weather is often described in Ayurveda as pitta heat, when the body wants something cool but the belly still dislikes a harsh sour hit. A diluted glass may soothe that summer restlessness. It is not a substitute for a doctor, and it is not a reason to skip water through the day.

Ingredients

  • 1 small raw mango
  • 1/2 teaspoon roasted cumin
  • A few leaves of mint
  • A pinch of rock salt
  • A small piece of jaggery

How to prepare

  1. Boil or roast the raw mango until soft, cool it, and scoop out the pulp.
  2. Mix the pulp with roasted cumin, mint, rock salt and a little jaggery, then dilute with plenty of cold water.

How to use

  • Serve a small glass, more water than pulp, so it is not too sour.
  • Sip it in the afternoon heat, not as a bottle through the whole day.
  • Make it fresh. Pulp kept for days in the sun is not this drink.

Helpful habits

  • Taste before you add more jaggery. The drink should stay tangy-salty, not like a sweet syrup.
  • Roast the cumin on a dry tawa until it darkens slightly and smells nutty.

Precautions

  • Keep it diluted. A thick, very sour glass can irritate the throat and stomach.
  • People who feel worse with sour food should take only a few sips or skip it.
  • Supportive summer drink only, not a substitute for a doctor if you feel faint, confused or unable to pass urine in the heat.
