Spiced buttermilk (takra) with lunch

Thin, freshly churned buttermilk with roasted cumin is praised in Ayurveda as one of the best drinks for digestion. It is light, cooling to the gut and easy to make.

Ingredients

  • ¼ cup fresh homemade curd (dahi)
  • ¾ cup water
  • ¼ teaspoon roasted cumin powder
  • A pinch of rock salt; a few chopped coriander or mint leaves

How to prepare

  1. Whisk or churn the curd and water together until smooth and frothy.
  2. Add the roasted cumin, salt and chopped leaves. Stir well.

How to use

  • Drink one glass with or just after lunch.
  • Avoid it at night, when Ayurveda considers curd products heavier.

Precautions

  • Use fresh curd — very sour or old curd can aggravate acidity.
  • Skip it during a cold, cough or sore throat.
  • Not suitable for people with a milk allergy; those with lactose intolerance should test a small amount first.
